Varieties of Honey
» LUCERNE (ALFALFA) HONEY (Medicago sativa)
Large productions can be found in the Po Valley. Colour: from light amber to amber if in liquid form, beige if crystallised.
Crystallisation: spontaneous few months after harvest, tends to ferment.
Fragrance: weak, winy.
Taste: equally weak, wax, winy, acid.
Usage: as table honey.
» SIDERITIS AND "SANTOREGGIA" HONEY
(Satureja Montana) - (Sideritis Syriaca)
A special honey produced on mountain meadows in Mount Sirente in Abruzzo, Santoreggia and Sideritis are small plants but with a very strong fragrance profile.
This kind of honey keeps unchanged all its therapeutic properties!
The "Santoreggia" plant is of the same family of Thyme, but with a more intense scent.
The Sideritis is a small plant of the mountains of Balkan origin, used in all Eastern European countries for its therapeutic properties in place of tea.
