» HEATHER HONEY (Erica arborea) Called in many parts of Italy "scopo", heather is a species from which the bees produce an excellent honey. From the Liguria region to Calabria (and large islands) this honey can be produced during spring, in the typical maquis (Mediterranean scrub). Significant productions are found in Liguria, Tuscany, Umbria and Sardinia. Colour: amber with orange hue. Crystallisation: soft, regular and pasty. Fragrance: caramelised, anise. Flavour: distinctive, sweet "mou", licorice, creme caramel. Usage: as table honey, does not give a quick sense of satiety as other honeys. |
» EUCALYPTUS HONEY (Eucalyptus sp.) Produced in Central-South Italy, where eucalyptus have been planted as windbreak hedges or for reforestation. Colour: medium amber, tends to gray when crystallised. Crystallisation: fine grained and compatct texture. Fragrance: intense, dried mushrooms, wet wool. Taste: strong, similar to the smell but more pleasant, recalls British licorice candies, double-malt beer, old honeycombs. Therapeutic properties: antibiotic action, anti-asthmatic, anti-catarrhal. Useful for coughing. Usage: as table honey. |
» FIR HONEYDEW (Abies alba ) Produced in the Alps and in the Appennines between Tuscany and Emilia-Romagna, it is one of the most well known and appreciated honey. Colour: very dark, almost black, with a slight greenish fluorescence Crystallisation: usually absent. Fragrance: slightly resinous, burned wood, caramelised sugar, wine, old honeycomb. Taste: less sweet and cloying of honeyes derived from nectar, balsamic, malt. Therapeutic properties: antiseptic of the lungs and of the respiratory tract Usage: as table honey. |
» HONEYDEW (di Metcalfa pruinosa) Metcalfa pruinosa is an american insect which has been recently introduced in our country. It is widespread especially in north-eastern Italy. It is used to attack many different plants that grow both spontaneous or that are cultivated and produces an abundant honeydew, collected by honeybees making it a very special honey. Colour: very dark, almost black. Crystallisation: usually absent. Fragrance: of vegetables, cooked vegetables, green tomato marmalade. Taste: decidedly less sweet and cloying of honeyes derived from nectar, slightly salty sometimes, malt, cooked vegetables, prunes, yeast. Therapeutic properties: New impetus for the brain, memory aid, for skin reddening and reinforcement of capillaries antiseptic of the lungs and of the respiratory tract Usage: as table honey. |
